POSITION: EXECUTIVE CHEF - GAMBLE SANDS

POSITION:  EXECUTIVE CHEF - CLUB & RESORT OPERATIONS - GAMBLE SANDS

Reports To:  General Manager and Director of Food and Beverage
 
Position Purpose:       
The Executive Chef is responsible for the overall culinary operation of the club and resort.  Development of all menus, interviewing, hiring, training and scheduling of all kitchen related personnel, P&L responsibility.  Must have a proven track record of managing and developing a culinary team.  Must have exceptional culinary skills with a “keen” taste and eye for quality and presentation.
 
General Description of Duties and Responsibilities:
  • Must be a leader and a “team” player, and
  • Culinary standards that are exceptional and consistent, and
  • Creative with a “can do” attitude, and
  • Can build and manage own team with a hands on approach, and
  • Has the desire through their established culinary background to develop a “national” reputation for club and self,
  • Will follow all state and federal guidelines for the safe preparation of all food products, and
  • Will represent the club from time to time in culinary competitions, and
  • The desire to create something very special.
Experience / Education / Certification Requirements:
  • Culinary degree with extensive experience in upscale food establishment or club.
  • Prior experience as excutive chef, sous chef or working chef.
  • Proven leadership experience.
  • Obtain and maintain current foodservice certification.
  • Able to communicate effectively in both verbal and written formats.
  • Able to delegate responsibilities.
  • Able to develop, lead, train and manage a team.
  • Computer literate with accurate typing skills.
  • Able to perform arithmetic computations for budgeting and cost analysis.
  • Understanding of local, state and federal health and sanitation laws.
  • Ability to work in a high energy and demanding environment
  • Strong organizational, leadership and problem solving skills
Physical Requirements:
  • Able to frequently lift and carry food, beverage and other items greater than 35 pounds and able to transport up to 40 pounds on a regular basis.
  • Frequent bending turning, kneeling and stooping
  • Exposure to hot and cold temperatures
  • Must be able to stand for extended periods.
  • Repetitive motion required including computer entry.
  • Must be able to operate a golf cart in a safe manner
  • Normal vision and hearing ranges required.
  • Must be able to fluently speak and write the English language.
